What is Assorted Baklava?

Assorted Baklava, also called Lebanese Baklava, is a collection of over 20 kinds of pastries and sweets made from nuts filled dough and sweetened with sugar syrup. These pastries are usually filled with pistachios, walnuts, or a blend of pine nuts and cashews.
It can be divided into two categories based on the dough used:

Phyllo Dough Pastries

About half of the Lebanese assorted Baklava types are made of many thin layers of phyllo dough filled with different nuts and cut into different shapes. Among these are the original Baklava, Kol Weshkor (also called Roses), Asabi (also called Fingers), Hadef, Bokaj, and Iswara (also called Rings).
"Assorted Baklava" can sometimes be confused with the term "Classic" or "Original" Baklava which refers to the first and most authentic piece in the Mediterranean pastries collection, widely known in the western world and made of roasted nuts (pistachios, pine nuts, cashews, or walnuts) sandwiched between layers of phyllo dough.

Knafeh Dough Sweets

While the phyllo dough based pastries have a light golden color and a relatively smooth surface, the knafeh dough based desserts have a dark brown color and a rough surface.
Knafeh dough is made of flour and water and usually formed in the shape of long strings.
Among these Lebanese sweets are Borma, Basma, Basima (Al Bohsali exclusive), Ballorieh, and Osh El Bulbul (also called Bird's Nest).

How is Assorted Baklava Made?

The phyllo dough or the knafeh dough is prepared into layers stacked on top of each other, then filled with nuts such as pistachios, walnuts, pine nuts, or cashews. Next, the dough is cut into pieces of the desired shape and butter ghee is added. Finally, the nuts filled dough is baked for over an hour and then drained and topped with sugar syrup.

Popularity

Assorted Baklava is mostly popular in Lebanon, Syria, Jordan, Palestine, the Arabic Gulf region, and Egypt. Its most authentic piece, the original or classic type, has reached worldwide popularity and is especially famous in Turkey, Serbia, Armenia, Iran, Greece, and Pakistan.
